This drink is a perfect use for Barr Hill Gin, which has a sweet, botanical flavor and is made with raw honey.
Ingredients
- 2 oz. gin, Barr Hill preferred
- 3/4 oz. honey syrup (1:1 honey and water)
- 1 oz. lemon juice
- 4 oz. sparkling mead
- lemon wedge for garnish

Add the gin, honey syrup, and lemon juice to a chilled Collins glass filled with ice. Stir briefly to chill before topping up with the sparking mead. Serve with a lemon wedge garnish.
