Pork & Shrimp Dumplings in Chili Sauce

What You’ll Need:
- Sifting spoon or mesh spoon
- Bowl of ice
- Bowl of water
- Big mixing bowl
- Big pot for boiling water
Ingredients
For the Dumplings
- 1/2 lb ground pork
- 1/2 lb raw shrimp, minced
- 1 tbsp fresh ginger, grated
- 1-2 cloves of garlic, minced
- 1 tsp Kosher salt
- 1/2 tsp sugar
- 1/2 tsp white pepper
- 1 cup scallions, chopped (you can do less, I prefer lots of scallions)
- 1 tbsp sesame oil
- 2 tbsp light soy sauce
- 1 package wonton wrappers (I use the square wrappers but you can use any shape you like!)
For the Chili Sauce
- 2 tbsp chili oil of choice
- 3 stalks scallions
- 1 tbsp sesame seeds
- 2 tsp sugar
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 clove of garlic minced
- 1/2 tsp sesame oil
- 2-3 tbsp hot water
Directions
- Step 1
Lay out a workstation with your wonton wrappers:
- Small bowl of water
- Baking sheet for the finished wontons
- Keep the wrappers covered with a damp paper towel to prevent them from drying out - Step 2
Place about 1 teaspoon of filling in the center of a wonton wrapper.

Dip your finger in the water and wet two adjacent edges of the wrapper.
- Step 4
Create a triangle—Fold the wrapper diagonally to form a triangle, pressing the edges firmly to seal and remove any air pockets.

Bring the two outer corners of the triangle together, moisten them with water, and pinch them to seal.
- Step 6
Repeat until you’ve reached your desired amount of dumplings!

Cooking the Dumplings: Bring a large pot of water to a boil. Using a sifted spoon or mesh strainer, drop about 4-5 dumplings in the pot. Boil for 3-4 minutes or until the dumplings float to the top of the water. Put cooked dumplings in a serving bowl. Repeat until all dumplings are cooked!

For the Chili Sauce: In a medium bowl, add all ingredients, finishing with boiling water. Mix until sugar is dissolved. Immediately serve on the side or poured over the dumplings!
