This cherry "ice cream" is Lydia’s go-to post-run treat—sweet, cold, and packed with good-for-you ingredients. Inspired by her time in Hawaii, this was her go-to while training for a marathon. It’s made with frozen cherries, almond butter, cacao, and a touch of cardamom for a soft-serve-like dessert that tastes as good as it makes you feel.


Ingredients

  • 2 cup frozen cherries
  • 2 tablespoon almond butter
  • 2 tablespoon cacao powder
  • 1 tablespoon raw honey
  • Pinch of salt
  • 2 teaspoon ground cardamom
  • Maldon salt (for finishing)

Directions

  • Step 1

    Crush the Cherries: Add the frozen cherries to a mixing bowl. Using the back of a spoon or a muddler, mash them until they’re mostly crushed but still chunky.

  • Step 2

    Mix the Base: Add the almond butter, raw honey, ground cardamom, and a pinch of salt. Stir until well combined.

  • Step 3

    Incorporate Cacao: Add the cacao powder and mix thoroughly until fully incorporated into the mixture.

  • Step 4

    Finish: Serve immediately as a soft-serve-style treat and finish with a pinch of Maldon salt before serving.
