Pear and Cinnamon Snacking Cake

This cake is soft, moist, and topped with pears that caramelize from the cinnamon sugar mixture. The perfect snacking cake for morning tea, dessert, or any time of day. You can swap the pears for apples, too. A great introduction to Fall.
Ingredients
For the cake
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 2 large eggs, room temperature
- 3/4 cup granulated sugar
- 1/2 cup whole milk
- 8 tablespoons salted butter, room temperature
- 1 teaspoon baking powder
- 1 pinch salt
- 1 tablespoon vanilla extract
- 5 pears sliced, thinly
For the topping
- 1 tablespoon cinnamon
- 1 tablespoon granulated sugar
- 1 tablespoon powdered sugar (optional)
Directions
- Step 1
Preheat your oven to 350 F and grease and line an 8-inch cake pan with parchment paper.
- Step 2
In a bowl beat the eggs, butter, vanilla and sugar until light and fluffy. In a separate bowl together all the flour, almond flour, salt, and baking powder.

Add the dry ingredients to the butter mixture and mix well, adding the 1/2 cup of milk.
- Step 4
Pour the batter into a greased pan and cover with the pear slices.
- Step 5
Combine the topping ingredients together in a small bowl. Sprinkle evenly on top of the cake.
- Step 6
Bake for about 50 minutes or until a cake tester comes out clean.
- Step 7
Let cake cool fully and remove from the cake pan. Dust with powdered sugar (optional).
