As simple and intuitive as it is delicious, this drink was designed to use up leftover berries from all the desserts our newest Test Kitchen creator, Terrence is baking up. Feel free to use whatever berries you have kicking around your fridge, bonus points if they are already macerated for something like a shortcake, but as the recipe shows below you can also mix a small amount of berries with sugar and lemon to bring out extra flavor and juice. Feel free to scale up as needed.

Directions

  • Step 1

Add the berries to a small bowl followed by the sugar, lemon juice, and zest. Mix to combine and let sit for 15-30 minutes or until most of the sugar is dissolved and the berries have released their juices.

  • Step 2

To build the drink, add the berries to the base of a chilled Collins or rocks glass. Add in the gin and fill the glass ¾ of the way with ice. Stir briefly and top with the chilled tonic water before serving.
