Ingredients
- 2 live lobsters
- Brioche lobster roll buns
- 1 bunch dill
- 1 bunch tarragon
- 1 bunch chives
- 1 tablespoon Dijon mustard
- 1/2 cup mayonnaise
- 2 lemons
- 1 Serrano pepper
- Olive oil
- Salt and black pepper
- Butter (for toasting buns)

Directions
- Step 1
Cook the Lobsters: Steam the lobsters until fully cooked (about 8–10 minutes). Immediately transfer them to a salted ice bath to stop the cooking. Once cool, pick the meat from the shells and roughly chop it. Add the lobster meat to a large mixing bowl.
- Step 2
Prepare the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, juice of 1 lemon, a drizzle of olive oil, salt, and black pepper until smooth.

Prep the Add-ins: Finely chop the dill, tarragon, and chives. Thinly slice the Serrano pepper. Add all of this to the bowl with the lobster meat.
- Step 4
Combine: Pour the dressing over the lobster mixture. Toss gently until everything is well combined and evenly coated.
- Step 5
Toast the Buns: Butter the brioche buns and toast them in a pan or under a broiler until golden.
- Step 6
Assemble: Fill each bun generously with the herby lobster mixture. Finish with a fresh squeeze of lemon juice over the top just before serving.
