Looking for a quick weeknight dinner idea? Cassie Yeung’s shrimp fried rice is a fast and easy recipe made with frozen vegetables, cold rice, and simple pantry ingredients.


Ingredients

  • 1/2 pound shrimp
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sesame oil
  • salt & pepper to taste
  • 2 eggs
  • 2 cloves garlic, minced
  • 4 green onions separating the whites & greens
  • 1/4 cup diced onions
  • 1/2 cup frozen mixed vegetables
  • 1 1/2 - 2 cup leftover cold rice
  • 2 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil

Directions

  • Step 1

    Marinate shrimp with the baking soda, sesame oil, and salt & pepper to taste as you prep the aromatics.

  • Step 2

    To a wok with neutral flavored oil, add in shrimp and spread flat. Cook for a minute or until you see them begin to turn pink around the edges. Sauté and cook for another minute then remove to a clean plate.

  • Step 3

    Crack in eggs, scramble and push to the side. Add in onion, whites of the green onions & garlic. Cook for about a minute then add in frozen veggies and mix everything in with the eggs.

  • Step 4

    Break up the rice as you add it in the pan then add soy sauce and oyster sauce.

  • Step 5

    Finish by adding back in shrimp and sesame oil. Garnish with green onion razzle dazzle and enjoy!
