This loaded breakfast wrap is a perfect mix of crispy bacon, fluffy eggs, melty cheddar, and golden tater tots, all wrapped in lavash and baked until crunchy. Ingredients
- 8 ounce thick-cut bacon
- 10 large eggs
- 1/2 cup plain fat-free Greek yogurt
- 1/2 tablespoon freshly ground black pepper
- 2 tablespoon reserved bacon fat (or vegetable oil)
- 8 ounce cheddar cheese, shredded
- 1/4 cup Edy’s everything seasoning
- 2 cup tater tots, baked, cooled
- 1 tomato, sliced
- 1 halloumi cheese block, shredded
- 3-6 lavash wraps

- Step 1
Make the filling: Arrange the bacon on the prepared baking sheet. Bake for about 12 minutes, until very crispy. Remove the bacon to a plate to cool. Pour off the bacon fat and reserve 2 tablespoons. Add the eggs, yogurt, pepper, and everything seasoning to a large bowl and whisk until fully combined.

Add the reserved bacon fat to a medium saute pan over medium heat. When the fat is simmering, pour in the egg mixture. Use a rubber spatula to stir and scrape the sides of the pan, working it into a soft scramble, 6 to 8 minutes. Remove the eggs to a large bowl and add the cheese. Crumble in the bacon and fold everything together. Let cool completely, about 30 minutes.

Lay out the lavash. Scoop 1/2 cup of cooled filling, tater tots, tomato, and halloumi. Roll and bake in oven, toaster oven or pan until crunchy and warm! Serve with tomato jam or spicy tahini
