Queso Fundido is a classic Mexican appetizer, a warm, gooey cheese dip traditionally served with tortillas. This version adds a savory twist with both chorizo and Smithfield Hometown Original Bacon, creating a deliciously rich flavor profile. The diced serrano and jalapeño peppers give the dish a kick, balanced out by the mild, creamy oaxaca cheese. This queso fundido is perfect for game days or dinner parties. Ingredients

  • 1/2 pack Smithfield Hometown Original Bacon, diced
  • 4 ounce chorizo
  • 1/2 onion, diced
  • 1 jalapeño pepper, diced
  • 1 tomato, diced
  • 20 ounce Oaxaca cheese, shredded
  • Cilantro (for topping)

Directions

  • Step 1

    Preheat the oven to 400°F (200°C).

  • Step 2

    Preheat a cast-iron skillet over medium heat.

  • Step 3

    Cook the bacon for 3-4 mins. Remove from the pan.

  • Step 4

    Cook your veggies: add in the diced onion, and jalapeño peppers. Cook until the onions are translucent, and the peppers are softened.

  • Step 5

    Add in your chorizo and cook for 3-4 mins.

  • Step 6

    Just before the chorizo is done, add the diced tomatoes. Cook for another 2-3 mins, until tomatoes have softened. Season with a pinch of salt and pepper.

  • Step 7

    Dab excess grease with a paper towel.

  • Step 8

    Remove half of the mixture and set it aside. Add in half your bacon.

  • Step 9

    Spread the shredded Oaxaca evenly over the chorizo and bacon mixture in the skillet. Then top with the leftover chorizo mixture & bacon.

  • Step 10

    Place the skillet in the oven and bake for 10-12 minutes, or until the cheese is fully melted and bubbly.

  • Step 11

    Carefully remove from the oven, top with some cilantro, and serve hot with warm tortillas on the side. Enjoy babe!
