One of my go-to party appetizers is a pinwheel, aka, a loaded wrap cut into convenient handheld slices. This snack is fun for both adults and kids alike with a ton of room for creativity and delicious flavor combinations! I’ve been seeing the viral “grinder sandwich” everywhere lately, which includes Italian salumi, provolone, and a lettuce, mayo, and vinegar combination on a toasted hoagie. I decided to take the grinder elements and wrap them up into a pinwheel for a tasty end-of-summer snack.
Ingredients
- 2 large flour tortillas
- 2 medium whole wheat tortillas
- 1/2 head iceberg lettuce, thinly chopped
- 6-10 banana pepper rings, chopped
- 1 garlic clove, minced
- 2 tablespoon mayonnaise
- 1 tablespoon red wine vinegar
- 2 tablespoon parmesan cheese, grated
- 1/4 teaspoon oregano
- Pinch salt and pepper, to taste
- 6 ounce maple glazed honey ham, thinly sliced
- 4 ounce mortadella, thinly sliced
- 4 ounce salami milano, thinly sliced
- 5 ounce provolone, thinly sliced

Directions
- Step 1
In a medium-sized bowl, combine the lettuce, banana peppers, garlic, mayonnaise, red wine vinegar, parmesan cheese, oregano, salt and pepper. Mix until well combined.
- Step 2
Lay a flour tortilla on a flat surface and place the lettuce mixture in a line down the center.
- Step 3
Layer the ham, mortadella, salami and provolone on the tortilla, starting from right to left. The key is to make sure the meat and cheese is evenly spread out for rolling.
- Step 4
Tightly roll the tortilla from one end to the other. Slice into 1 ¼-inch rounds and serve ingredients facing up, on a platter.
