Strawberry Tarragon Ice Pops

Simple herbed ice pops using fresh ingredients.


Ingredients

  • 1 cup strawberries
  • 10-15 piece tarragon leaves
  • 4-5 piece stevia leaves
  • 2-3 tablespoon coconut water
  • splash balsamic vinegar

Directions

  • Step 1

    Simmer all ingredients but vinegar over medium heat until strawberries release most of their juices and it is easy to mash them up.

  • Step 2

    (optional) Remove from heat and add vinegar.

  • Step 3

    Remove tarragon and stevia and roughly mash up strawberries.

  • Step 4

    Pour into ice-pop mold and freeze for 24 hours.

  • Step 5

    To remove pops from mold, place under warm water until stick can easily be pulled out.
