Peach (or other Fruit) Cobbler

I baked and ate this dessert the day I went into labor with my first child. I was one day beyond my due date and getting anxious. I henceforth associated the onset of labor with the consumption of this wonderful and easy to prepare dessert.
I have baked (or given this recipe) to a number of women who are awaiting the birth of a baby, assuring them that after eating the cobbler they will go into labor! After all, it worked for me. Of couse, it only works for babies due in the summertime.
Ingredients
Base
- 5 cup fresh peaches (or nectarines or prune plums)with the peel
- 1 tablespoon fresh lemon juice
- cinnamon
- sugar
Topping
- 1 cup sugar
- 1 cup flour
- 1/2 teaspoon salt
- 1 egg, lightly beaten
- 6 tablespoon melted, unsalted butter

- Step 1
Sweeten peaches (or other fruit) to taste.
- Step 2
Add cinammon to taste and lemon juice.
- Step 3
Pour into over-proof baking dish.
- Step 4
Mix sugar, flour, salt and lightly beaten egg until crumbly and spread on top of peaches.
- Step 5
Drizzle top with melted butter and bake in pre-heated 375 degree oven for 45-50 mintues until bubbly and light brown.
- Step 6
Can be served as is, or with creme fraiche, Greek-style yogurt, whipped cream or ice cream.
