What to Bake When It’s Too Hot for the Oven

I had some leftover lemon curd and wanted to pair it within one of my snacking cakes. Raspberry and lemons are one of my favorite combinations, so I knew immediately that this would go great with it. You can make your own lemon curd or opt for a store bought version to get the same great taste!

Growing up I'd love eating Poptarts that were meant to be shared amongst me and my brothers for school mornings and lunches. That love of Poptarts has extended into my adult life and has helped me create a ton of fun flavors based on what I'm craving at the moment.

These peach cobbler Poptarts came to fruition after I went to the farmer's market and saw in-season peaches. I wanted to make the filling similar to an actual peach cobbler and then instead of using traditional sprinkles, I opted for a "crumble topping sprinkle."

I love baking bread and as long as you have a good base recipe, the possibilities are endless with what you can add to it. I prefer using pickled jalapeños in this recipe because the brine from the pickled jalapeños adds additional saltiness and flavor to the bread itself once fully baked. You should use a bread oven or dutch oven to get this baked. If you don’t have one, you could try a pot that is able to withstand a temperature of 450 F.

I was inspired to make this Peaches and Cream cake because my farmer's market was on its last weekend of having peaches sold. The base layer is a simple vanilla cake with lemon zest and then it's topped with a vanilla whipped cream and peaches that are soaked in brown sugar and lemon juice.

Snacking cakes should be no stress, quick to come together, and versatile with the toppings you want! Lemon and olive oil are an easy, tasty pairing for the base of the cake. You then top it with a creamy, lemony cream cheese frosting and some in-season raspberries and blackberries. The best part of a snacking cake is that you get to enjoy it throughout the week any time of day.

Lemon Olive Oil Snacking Cake

I like calling this my award winning quiche because I won an award for Best Savory Pie for a Home Baker at a pie baking festival here in Atlanta. I think the main appeal to this quiche is the pie crust, which is super flaky and bakes up nicely with a few extra steps.

The filling can be whatever you'd like! I always have extra or leftover vegetables hanging out in my fridge, but if you have things that you're saving in your freezer, this could be a good option too.

I definitely prefer making pie crust at home and will always stress the importance and ease of doing so versus buying a store bought pie shell. It really makes the world of a difference!

Whether you're making this quiche with vegetables or adding something like bacon, you'll be going back for seconds and thirds with how much you'll enjoy it!

As I’ve said before, snacking cakes are just cakes that you can enjoy throughout the week no matter the time of day. You should be able to incorporate seasonal items into it to help make the process both easy and enjoyable. I love stone fruit season because my farmers market always has a ton of peaches varying in sizes. I had some leftover peaches and wanted to make a cake that had a crunchy topping, but contrasted with the jammy peaches that are added to the cake batter. I do recommend searching for the freeze dried peaches because it gives it a nice visual once the cake is ready to be enjoyed, but don’t let that specialty item stop you from making this!
