Have no fear of absinthe! Although the so-called “Green Fairy” is famed for causing hallucinations, it truly is nothing but a high-proof spirit with a bold, herbal-anise flavor. Rumors of its mythic effects date back to 19th-century propaganda, mostly the work of French winemakers who were mad that everyone started drinking absinthe instead of wine. Regardless, this absinthe martini with an intimidating name is a great way to use up a bottle.
Ingredients
- 2 ounce gin
- 1/4 ounce dry vermouth
- 1/4 ounce absinthe
- green olives for garnish, optional

Add the ingredients to a mixing glass and stir with ice for 30 seconds or until chilled. Strain into a chilled coupe or martini glass, optionally garnish with olives, and serve immediately.
