This cocktail was created by Kenaniah Bystrom, bar manager of Essex. The IPA syrup is a cinch to make, and very much worth the effort. If you're looking for other uses for the syrup, try it in a riff on an Old Fashioned: shake together 2 ounces rye whiskey, 2 dashes orange bitters, and 1/4 ounce IPA syrup. Strain; then garnish with an orange peel.

Ingredients

The cocktail

  • 1 1/2 ounce bourbon or rye
  • 1/2 ounce Campari
  • 1/2 ounce IPA syrup (see below)
  • 1/2 ounce freshly squeezed lime juice
  • 1 lime wedge, for garnish

The IPA syrup

  • 12 ounce IPA (ideally a light, floral IPA, such as Avery - or, barring that, Sierra Nevada Pale Ale)
  • 1 teaspoon orange flower water
  • 12 ounce granulated sugar
