Strawberry Rosé Spritzer

I've traditionally been a purist when it comes to pink wine, but it occurred to me recently that if someone wanted to enjoy the illusion of drinking more rosé without actually getting tipsy, she could combine it with soda water and make a spritzer. (You can take a girl out of the 80s...) What's more, she could whizz up some of those divinely delicious strawberries from the farmers market and add a fruity burst to her spritzer.


Ingredients

Strawberry Puree

  • 1 pound strawberries, rinsed and hulled
  • 3 tablespoon sugar (more or less, depending on the sweetness of your berries)

Spritzer

  • 3 tablespoon strawberry puree (plus more to taste)
  • 3 ounce dry rosé
  • Soda water

Directions

Strawberry Puree

  • Step 1

    Stir together the strawberries and sugar in a bowl and let them sit for an hour or so, until nice and juicy.

  • Step 2

    Puree the berries and sugar in a blender, and then pass the puree through a fine mesh sieve. You should have about 3/4 cup of puree.

Spritzer

  • Step 1

    Put 4 or 5 ice cubes in an 8-ounce tumbler. Add the strawberry puree and the rosé and stir to combine.

  • Step 2

    Top with soda water and stir gently. Serve immediately.
