Beautiful and Dangerous
I’ve been waiting for years to find the perfect Japanese knife for my kitchen. This one with the birch handle was just too pretty to pass up. It handles very well and is super sharp!! I thought the handle would be slippery but the weight of the chef’s knife perfectly balances in your palm. I also love that this company employees a lot of women. So I now refer to my knife with a she pronoun. She’s my go to knife for everything now!

Beautiful, but delicate- stains very easily
Beautiful knife, great blade and very balanced. Japanese knives are always a bit more maintenance in my experience- but this one has the additional concern that the birch stains extremely easy. I was cutting fruit and now my birch knife is a red color— I guess it was an extremely memorable batch of jam. A tad disappointing that the wood has no seal and is So susceptible to stain, not the best situation to have ruined a $300+ knife with a few strawberries.
