WHO: Fig Test Kitchen is a mother-daughter pair of bloggers based in New Haven, Connecticut.

WHAT: Pancakes to eat with your pinkie up.

HOW: Mix together a batter, fold in chocolate chunks, and griddle 'em up.

WHY WE LOVE IT: It's rare we find a breakfast recipe that's throw-together-while-still-half-asleep easy -- and elegant. In fact, we could even see these as a dinner party dessert -- with vanilla ice cream.

Serves 4 to 6

4 ounces high quality dark chocolate or chocolate chips
1 1/2 cup all-purpose flour
3 tablespoons sugar
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 tablespoon sea salt
1 to 1 1/2 teaspoons dried lavender (to taste)
1/2 cup crème fraîche
1 cup whole milk
3/4 teaspoons lemon zest (optional)
1 tablespoon vanilla extract
2 large eggs
2 to 4 tablespoons unsalted butter
Good quality maple syrup (optional)
