You don't need any sugar, honey, or agave to sweeten this summer-perfect mocktail—just pineapple juice. When simmered on the stovetop for about 45 minutes (give or take), the pineapple juice thickens down into a syrupy, puree-like consistency and gains an even more intensely pineapple taste. It's bright, tropical notes pair up perfectly with LaCroix Sparkling Water's new Guava São Paulo flavor, which is fruity, effervescent, and tastes like a sunny beach day. A dash of coconut water brings coolness, while the lime wedge adds just the right amount of citrusy zing. This recipe is shared in partnership with LaCroix Sparkling Water.
Directions
For the drink:
- Step 1
Add the pineapple syrup and coconut water to your glass, and stir to combine. Fill the glass with ice and top off with the Guava São Paulo. Squeeze the lime wedge into the glass and serve.
For the pineapple syrup:
- Step 1
Bring the pineapple juice to a boil in a medium saucepan. Then reduce to a simmer and cook until thick and puree-like, stirring occasionally—about 45 minutes to 1 hour. Let cool and store in the fridge for up to 2 weeks.
